A Nice Side Dish Helps the Meal

Have you ever struggled to pair your main entree with a delicious side? Here are a couple of suggestions for you to try. Your entree does not have to be for a bold meal. It can be a simple lunch or light early dinner.

Creamy Garlic Spinach:

Spinach is one of my hubby's favorite greens. I decided to cream this with Greek yogurt and cream cheese after sauteing the spinach with garlic and olive oil. I topped it off with hemp hearts for a bump in protein.

Bow Tie Chickpea Salad:

I love pasta salads. These side dishes can be served cold or warm. It is up to you. This salad is completed by assembling cooked bow tie pasta, softened chick peas, cut fresh tomatoes, cilantro, and Italian dressing. You can season the salad to your liking or add minced garlic.
